Nose: Strawberries, coconut, butter
Flavor: umami, dried fruits, apricot, cherries, strawberries, lactic acidity.
Varietal: Paraiso is a cross between a Timor Hybrid and a Yellow Catuai. The trees are short and give yellow cherries that make great cups. Besides that, the Paraíso trees are resistant to the leaf rust and to a particularly dangerous type of nematode called Meloidogyne exigua.
Process: We made this coffee fermenting the ripe Paraiso cherries inside an open tank. We don’t use water, yeast, or any other additives – it’s an open, natural fermentation.
